- Trim the stems: Remove thick or fibrous stems, but you can keep the softer, tender ones.
- Always blanch the spinach: Blanching not only helps preserve the bright green color but also kills harmful microorganisms and removes pesticide residues.
- Reduce bitterness naturally: Blanching lowers oxalic acid in spinach, which makes the dish taste smoother and less bitter.
- Smart storage: If you have leftover blanched spinach, store it in an airtight container or zip-lock bag in the freezer. You can also freeze it in ice-cube trays for easy portioning later.

Ingredients
- Spinach – 300 g
- Paneer – 150 g (grated)
- Cheese – 100 g (grated)
- Tomatoes – 2 medium, thinly sliced
- Green Chillies – 2–3
- Garlic – 8 cloves
- Fresh Cream – 2 tbsp
- Salt – to taste
- Black Pepper – ¼ tsp
Method
1.Prepare Paneer and Cheese
- Grate paneer and cheese, keep aside.
2. Blanch Spinach

Wash spinach and blanch in hot water for 2–3 minutes, then drain.
3. Make Spinach Puree

- Blend blanched spinach with garlic, green chillies, salt, and pepper into a smooth puree.
- Add cream and blend again until well combined.
4. Layer the Dish

- In a baking dish, spread the spinach puree evenly.
- Sprinkle grated paneer on top.
- Add grated cheese over the paneer.
- Arrange sliced tomatoes on the top layer.
5. Bake
- Preheat oven to 200°C.
- Bake for 15 minutes or until the tomatoes are lightly roasted and the cheese melts.
6. Serve
- Enjoy hot with kulchas, naan, or steamed rice.
